🥕 Ingredients
For the Bowl:
- 🍠 400g sweet potatoes (3 small), cubed
- 🥦 250g tenderstem broccoli
- 🥫 400g chickpeas (drained and rinsed)
- 🥢 1 block of tofu
- 🌾 150g dry couscous
- 💧 250ml boiling water
- 🥕 3 carrots, grated
- 🫒 Olive oil, salt, and pepper
- 🌶️ Spices:
- 1 pinch of chili powder or chili flakes
- 1/2 teaspoon ground coriander
For the Tofu Glaze:
- 🥢 60ml soy sauce
- 🌱 1 teaspoon ginger (powdered or freshly grated)
- 🍯 1 tablespoon maple syrup
For the Tahini-Peanut Dressing:
- 🥜 50g tahini
- 🥜 30g peanut butter
- 🍋 4 tablespoons lemon juice
- 🫒 3 tablespoons olive oil
- ✨ 1/2 teaspoon turmeric
- 🌿 1/2 teaspoon cumin
- 🧂 Salt and pepper to taste
- 💧 Water (to adjust consistency)
👩🍳 Instructions
1. Roast the Vegetables 🔥
- Preheat your oven to 200°C.
- Place the cubed sweet potatoes on a baking tray, drizzle with olive oil, season with salt and pepper, and roast for 20 minutes.
- After the first 5 minutes, add the tenderstem broccoli to the same tray, also drizzled with olive oil, salt, and pepper. Roast for the remaining time.
2. Cook the Spiced Chickpeas 🌶️
- In a pan over medium heat, add a small amount of olive oil.
- Add the chickpeas and cook for 2-3 minutes.
- Sprinkle with chili powder, ground coriander, and salt. Stir well and cook for another minute, then remove from heat.
3. Prepare the Tofu 🍛
- Using the same pan, add a bit more olive oil and fry the tofu until golden on all sides.
- Mix together the soy sauce, ginger, and maple syrup, then pour it over the tofu.
- Cook until the sauce is fully absorbed.
4. Cook the Couscous 🍚
- Bring 250ml of water to a boil.
- Remove from heat and add couscous.
- Cover and let it sit for 10 minutes, then fluff with a fork.
5. Make the Tahini-Peanut Dressing 🥜
- Blend together tahini, peanut butter, lemon juice, olive oil, turmeric, cumin, salt, and pepper.
- Add water until you reach your desired consistency. A slightly liquid dressing works best for easy drizzling.
6. Assemble the Salad Bowl 🥗
- In a bowl, arrange the roasted sweet potatoes, broccoli, spiced chickpeas, tofu, couscous, and grated carrots.
- Drizzle generously with the tahini-peanut dressing.
