This potato-based quiche is a cozy, protein-rich twist on the classic. By swapping the pastry crust for a base made of mashed potatoes and sweet potatoes, you get a naturally gluten-free, hearty foundation that’s packed with flavor. For the crust:
- 300g potatoes (about 2 small)
- 300g sweet potatoes (about 2 small)
- Salt & pepper to taste 🧂
- Olive oil or baking paper for the tray
For the filling:
- 1–2 carrots, chopped
- ½ cup soya chunks (or any veggie/protein combo you like)
- ½ cup water + 1 cube vegetable stock (or pre-made veggie broth)
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp cumin
- Salt & pepper to taste
For the quiche mixture:
- 3 eggs 🥚
- 1 can crème fraîche (~200ml)
- 80g mozzarella cheese 🧀
- Salt & pepper to taste 🧂
👩🍳 Instructions
- Make the crust:
Peel and chop the potatoes and sweet potatoes into chunks. Boil until soft (about 10–15 minutes), then drain well. - Shape the base:
Transfer to a lined or oiled baking tray. Use a fork to mash and press the mixture evenly into the shape of the tray, including the edges. Season with salt and pepper. Bake at 200°C (390°F) for 20 minutes, until lightly crisped. - Prepare the filling:
While the base bakes, sauté the chopped carrots in a pan with a bit of oil. Rehydrate the soya chunks in hot water with the vegetable stock cube. Once soft, add to the carrots along with paprika, garlic powder, cumin, salt, and pepper. Cook for a few minutes until well combined and flavorful. - Mix the quiche base:
In a bowl, whisk together the eggs, crème fraîche, mozzarella cheese, and a good pinch of salt and pepper. - Assemble:
Once the base is out of the oven, layer in the carrot and soya mix, then pour over the egg mixture evenly. - Bake again:
Return to the oven for 25 minutes at 200°C, or until golden and set in the center.
