- 300g fresh spinach
- 200g feta cheese
- 200g all-purpose flour
- 2 eggs 🥚
- 120ml milk (I used almond milk, but any milk works!) 🥛
- ½ tbsp baking powder
- 5 tbsp olive oil
- Salt & pepper to taste 🧂
- A bit of butter (for cooking the spinach) 🧈
👩🍳 Instructions

Make the batter:
In a large bowl, mix the flour, baking powder, and eggs. Add the milk and olive oil. Season with salt and pepper. Mix well until you get a smooth, homogeneous batter.
Prepare the filling:
Cook the spinach in a pan with a little salted butter until wilted and reduced. Let it cool slightly, then mix it into the batter along with the feta, crumbled or chopped into small chunks.
Bake it up:
Grease or flour a loaf tin. Pour the batter into the tin and smooth the top. Bake in a preheated oven at 200°C (390°F) for 45 minutes, or until golden and a toothpick comes out clean.
