Homemade Katsu Curry Recipe

A comforting and flavorful katsu curry made with a rich, aromatic sauce, crispy vegetarian katsu, and served with sticky rice, edamame beans, and fresh spring onions.

🌿 Ingredients

For the Katsu Curry Sauce:

  • 🫒 2 tbsp olive oil
  • 🧅 1 onion, diced
  • 🧄 1 garlic clove, minced
  • 🫚 1 tsp grated fresh ginger (or 1/2 tsp ginger powder)
  • 🍛 2 tbsp mild curry powder
  • ✨ 1 tsp turmeric
  • 🌾 1 tbsp plain flour
  • 🥣 300ml vegetable stock
  • 🥥 100ml coconut milk
  • 🥢 1 tsp soy sauce
  • 🍯 1 tsp maple syrup or sugar
  • 🧂 Salt, to taste

For the Katsu:

  • 🌱 Vegetarian meat alternative, tofu, or pumpkin
  • 🍞 Panko breadcrumbs
  • 🌾 Plain flour
  • 🥚 1 egg or plant-based alternative
  • 🛢️ Oil for frying

To Serve:

  • 🍚 Sticky rice
  • 🌱 Edamame beans
  • 🌿 Sliced spring onions

👩‍🍳 Instructions

Making the Curry Sauce:

  1. 🔥 Heat the olive oil in a pan over medium heat. Add the diced onion, garlic, and ginger. Sauté until softened.
  2. 🍛 Stir in the curry powder and turmeric, allowing the spices to toast for about 1 minute.
  3. 🌾 Sprinkle in the flour and mix well, cooking for another minute.
  4. 🥣 Slowly pour in the vegetable stock, stirring constantly to avoid lumps.
  5. 🥥 Once the stock is fully incorporated, add the coconut milk and stir until smooth.
  6. 🥢 Stir in the soy sauce and maple syrup (or sugar), then season with a small pinch of salt (remember, the soy sauce is salty).
  7. ⏳ Let the sauce simmer on low heat until it thickens to your desired consistency. Keep warm.

Preparing the Katsu:

  1. 🔪 Slice your chosen katsu base (vegetarian meat, tofu, or pumpkin) into even portions.
  2. 🥣 Coat each piece in flour, then dip into beaten egg (or a plant-based alternative), and finally coat with panko breadcrumbs.
  3. 🍳 Heat oil in a pan and fry the coated pieces until golden brown and crispy. Drain on paper towels.

Assembling the Dish:

  1. 🍚 Serve the crispy katsu over a bed of sticky rice.
  2. 🍛 Pour the rich katsu curry sauce over the top.
  3. 🌱 Garnish with edamame beans and sliced spring onions.
