Butter Curry Tofu Wraps

If you’re in the mood for something warm, cosy, and absolutely packed with flavour, these Butter Curry Tofu Wraps are the perfect midweek treat 🌯✨. They’re creamy, satisfying, and totally customisable. Whether you’re meal prepping, feeding friends, or just vibing with a quiet night in, this recipe hits the spot.

I’ve added 🥕 carrot ribbons and sweet caramelised onions to mine, but feel free to throw in whatever you fancy — rocket, spinach, pickled onions, or even some crushed nuts for texture 🌿💫 Let’s get into it!

✨ The Star of the Show: Crispy Tofu

You’ll need:

  • 1 block tofu (pressed and cubed) 🧽🔪
  • 1 tbsp olive oil 🫒
  • 1 tsp salt 🧂
  • 3 tbsp cornflour
  • 1 tbsp nutritional yeast 💛

Method:
Toss the tofu in a bowl with the oil, salt, cornflour, and nutritional yeast until evenly coated. Spread it out on a baking tray and bake at 200°C for 20 minutes 🔥 until golden and crisp. These little cubes soak up the butter curry like a dream 😍.


🍛 The Creamy Butter Curry Sauce

Ingredients:

  • 1 sweet potato (peeled & cubed) 🍠
  • 1 small piece of ginger, minced 🌿
  • 3 garlic cloves, minced 🧄
  • 1 tbsp curry powder (your fave blend)
  • 1 tsp turmeric ✨
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1 tsp mustard
  • 1.5 tbsp tomato purée 🍅
  • 100g crème fraîche or vegan cream alternative 🥛🌱

Method:

  1. Sauté the sweet potato in a bit of oil over medium heat until soft 🍳.
  2. Add the tomato purée, garlic, and ginger (powdered versions work too!) and stir until fragrant 🌶️🧄.
  3. Stir in all the spices and the cream — toast everything together for about a minute 🌈.
  4. Transfer to a blender and blitz until smooth and creamy 🌀.
  5. Pour it back into the pan, add the crispy tofu, and give it a good mix 😋.

Now for the fun part — assembly! 💃
Grab 3 of your favourite wraps and pile in the butter curry tofu, plus your toppings of choice. I went with carrot ribbons 🥕 and caramelised onions 🧅, but you do you. A handful of rocket or baby spinach would be dreamy too 🌱💭.
