- 🧀 70g parmesan cheese, finely grated
- 🥚 1 egg
- 🧂 A pinch of salt and pepper

Instructions
- 🔥 Preheat your oven to 200°C (400°F).
- ✂️ Roughly chop the carrots into big chunks — no need to be precise.
- 🤏 Add the carrots, parmesan, and egg into a food processor. Blitz everything together until you get a textured but sticky mixture.
- 🧻 Line a baking tray with parchment paper (this is key so they don’t stick!).
- ➗ Divide the mixture into 4 portions for medium tacos or 6 for smaller ones. Flatten each into a thin round — about ½ cm thick.
