There’s something magical about the smell of freshly baked cinnamon rolls wafting through the kitchen. Whether it’s a lazy Sunday morning in London or a midweek mood-booster, these golden, sticky swirls are guaranteed to bring a little joy to your day. I tried my hand at baking them from scratch recently — and spoiler alert: it was so worth the mess.
Here’s how to recreate this cinnamon roll bliss at home. ✨

🛒 Ingredients
Dough
- 400g organic strong white bread flour
- 6g salt 🧂
- 7g dried yeast
- 30g caster sugar
- 240ml warm water 💧
Filling
- 10ml cold water
- 100g caster sugar
- 2g ground cinnamon 🌿
Topping
- 100g icing sugar
- 10–15ml water
👩🍳 How to Make the Cinnamon Rolls
1. Mix the Dough
In a large bowl, combine the flour, salt, yeast, and sugar. Add 240ml of warm water and mix with your hands for around 30 seconds until a rough dough forms.
2. Knead It
Transfer the dough to a clean surface and knead for 5 minutes until smooth and elastic.
3. First Rise
Place the dough back in the bowl, cover it with a clean cloth or wrap, and let it rise in a warm spot for 90 minutes. It should double in size — I left mine near the window with some sunshine 🌞.
4. Shape the Dough
Once risen, remove the dough and knock out the air. Roll it into a rectangle approx. 25 x 23 cm and 0.5 cm thick. Lightly flour the surface if needed.
5. Add the Filling
Brush 10ml of cold water over the surface. Mix the sugar and cinnamon, sprinkle it on evenly, and press it gently into the dough with a rolling pin.
6. Roll & Slice
Roll the dough tightly from long edge to long edge to form a 35cm log. Slice into 8 equal pieces.
7. Second Rise
Place the rolls cut-side up on a lined baking tray. Slightly flatten each roll with your palm and leave at least 2cm space between them. Cover and let rise for 30 minutes while you preheat the oven to 200°C 🔥.
8. Bake
Bake the rolls for 15 minutes until golden brown and irresistible.
9. Ice & Enjoy
Mix the icing sugar with 10–15ml of water, adding the water slowly until you have a smooth icing. Drizzle in a circle pattern over the warm buns. Eat immediately — they’re best fresh! 😋
