  • 2 tbsp tomato paste
  • 2 tbsp BBQ sauce
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar (or apple cider vinegar)
  • 250ml tomato sauce 🍅
  • 1 tsp smoked paprika
  • ½ tsp chili flakes 🌶️ (more if you like it spicy!)
  • 1 tsp ground cumin
  • 1 tsp brown sugar or sweetener of choice (e.g., date syrup)
  • 400g butter beans (or chickpeas, lentils, etc.) 🫘
  • ½ vegetable stock cube/pod
  • 200ml water 💧
  • Salt & pepper, to taste 🧂

To Assemble:

  • 6 tortillas 🌮
  • Cheese of choice (vegan or dairy) 🧀

  1. Sauté the Veggies
    Heat olive oil in a large pan over medium heat. Add carrots, mushrooms, sweet potato, and corn. Cook for about 6–7 minutes, stirring occasionally, until just softened.
  2. Add Seasonings & Sauce
    Add garlic powder, stir for 1 minute. Then mix in tomato paste and BBQ sauce. Cook for 2 minutes.
  3. Layer in the Flavor
    Stir in soy sauce, vinegar, and tomato sauce. Add smoked paprika, chili flakes, cumin, sweetener, and stir well.
  4. Toss in the Beans
    Add the beans, crumble in the stock cube, and pour in 200ml water. Bring to a boil, then reduce to a low simmer. Let it bubble gently for about 10 minutes, or until thick and spreadable. Season with salt and pepper.
  5. Assemble the Quesadillas
    Lay the tortillas flat. Spoon the filling onto one side of each, top with cheese, then fold to close.
  6. Bake to Crispy Perfection
    Place the quesadillas on a baking tray and bake at 200°C (390°F) for 5–10 minutes, or until golden and crispy.
