Here’s a super easy, flavour-packed dinner that comes together in just 20 minutes and uses only one pan (well, technically a baking tray 😄). Think juicy dumplings bathing in a rich, creamy curry sauce—all roasted in the oven for max ease and minimal washing up.
I served mine with chilli oil, rice, and some optional caramelised carrots on the side—but honestly, the curry gyozas with rice are already so good on their own. Total comfort food 🥰
🛒 Ingredients (Serves 2)
For the curry dumplings:
- 🥄 1 individual pot of curry paste (I used Patak’s Tikka Masala Curry Paste pot – feel free to use your favourite)
- No individual pots? Use 2.5 tbsp of curry paste
- 🧄 1 tsp garlic (minced or paste)
- 🌶 1 tsp ginger (grated or paste)
- 🧂 3 tbsp soy sauce
- 🍶 1.5 tbsp rice vinegar
- 🥢 1 tbsp sesame oil
- 🥥 400ml coconut milk
- 🥟 14 frozen dumplings or gyozas (I used Itsu’s veggie ones)
Optional toppings & sides:
- 🌶 Chilli oil (for a spicy kick)
- 🍚 Steamed rice
- 🥕 Optional: Caramelised carrots (see below)
👩🍳 Method
1. Mix the Curry Sauce
In a baking tray (yes, directly in it – less mess! 🙌), mix:
- Curry paste
- Garlic + ginger
- Soy sauce, rice vinegar, sesame oil
- Coconut milk
Whisk until smooth and fully combined.
2. Add the Dumplings
Nestle 14 frozen dumplings straight into the sauce in a single layer. No need to thaw—straight from freezer to tray!
3. Bake
Place the tray in a preheated oven at 200°C (fan) and bake for 15 minutes. The dumplings will steam through, and the sauce will bubble and thicken slightly.

4. Optional: Caramelised Carrots (for extra flair 🥕✨)
If you want to go the extra mile:
- Slice 2–3 carrots into batons.
- Boil until slightly tender.
- Drain and sauté in olive oil with salt, pepper, and 2 tsp smoked paprika.
- Add ½ tsp ground ginger, 1 tbsp soy sauce, and 1 tbsp syrup (I used date syrup, but maple/agave work too).
- Cook until sticky and caramelised.
5. Serve
Spoon dumplings and curry sauce over fluffy rice 🍚. Add a drizzle of chilli oil if you like it spicy 🌶. If you’re going all in, serve with the sweet, sticky carrots on the side. Either way, delicious!
