This warm take on a classic tabbouleh combines spiced chickpeas, nutty bulgur, and juicy tomatoes, tied together with fresh parsley and a splash of lemon. It’s simple, hearty, and perfect for a light dinner, meal prep, or a picnic in the sun. ☀️🧺
🛒 Ingredients
- 1 x 390g tin of chickpeas, drained and rinsed 🧆
- 130g bulgur wheat 🌾
- 2 ripe tomatoes, finely diced 🍅
- 1 shallot, peeled and finely sliced 🧅
- 1 garlic clove, minced 🧄
- 10g fresh parsley, finely chopped 🌿
- Juice of ½ lemon 🍋
- 1 vegetable stock cube or pod 🧂
- 25g honey (approx. 1 ½ tbsp) 🍯
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground ginger
- ½ tsp ground turmeric
- Olive oil 🫒
- Salt 🧂
👩🍳 Instructions
- Cook the shallot:
Heat a drizzle of olive oil in a pan over medium heat. Add the sliced shallot and cook slowly for 8–10 minutes, stirring occasionally, until soft and golden brown. - Cook the bulgur:
While the shallot is cooking, bring a pot of salted water to the boil. Add the bulgur wheat and cook according to the package instructions (usually around 10–12 minutes). Once cooked, drain and return it to the pot. - Spice the chickpeas:
Once the shallots are ready, stir in the minced garlic, chickpeas, cumin, coriander, ginger, and turmeric. Cook for 1 minute to toast the spices and warm the chickpeas. - Add stock and honey:
Dissolve the vegetable stock cube in 100ml hot water and pour into the pan. Bring to a gentle boil, then reduce the heat and simmer until the liquid has evaporated — about 5 minutes. Stir in the honey and cook for 1 more minute, then remove from the heat. - Prepare the fresh mix:
In a bowl, combine the cooked bulgur with the diced tomatoes, juice of half a lemon, and a drizzle of olive oil. Mix well to coat. - Bring it all together:
Fold the chickpea mixture and chopped parsley into the bulgur. Taste and adjust seasoning if needed. Done — the tabbouleh is ready!
