Crispy Baked Aubergine Bites with Fresh Yogurt & Cucumber Sauce

This is one of those recipes that comes together with very little effort but delivers big on flavour. It’s simple, a bit addictive, and works perfectly as a snack, side, or even a light dinner.

I made it with nutritional yeast instead of parmesan, and honestly, it turned out amazing 😍 Slightly crispy on the outside, soft inside, and full of flavour.


  • Type: Vegetarian 🌱 (vegan if using nutritional yeast + plant-based yogurt)
  • Time: ~40 minutes ⏱️
  • Servings: 2 people 🍽️

🛒 Ingredients

🍆 For the aubergine

  • 2 aubergines
  • ½ cup breadcrumbs
  • ½ cup parmesan or nutritional yeast (I used nutritional yeast 💛)
  • 1 tbsp paprika (smoked if possible 🔥)
  • ½ tbsp garlic powder
  • 1 tsp oregano or thyme 🌿
  • ½ tbsp olive oil
  • Salt & pepper to taste

🥣 For the yogurt & cucumber sauce

  • ½ cucumber 🥒
  • Juice of ½ lemon 🍋
  • 4 tbsp yogurt (or 1 small yogurt — coconut or natural)
  • 1 tbsp fresh mint or dill 🌱
  • Salt to taste

👩‍🍳 Method

1. Prepare the aubergine 🔪

Preheat your oven to 180°C.

Cut the aubergines in half, then into 1–2 cm slices, and then into bite-sized pieces. You can peel them or leave the skin on, it’s totally up to you.


2. Season 🧂

Add the aubergine pieces to a large bowl and mix with:

  • breadcrumbs
  • parmesan or nutritional yeast
  • paprika
  • garlic powder
  • oregano or thyme
  • olive oil
  • salt & pepper

Mix well until everything is evenly coated.


3. Bake 🔥

Spread the aubergine on a tray in a single layer (important for crispiness!).

Bake for 30 minutes, until golden and slightly crispy ✨


4. Make the sauce 🥣

While the aubergine is in the oven:

  • Cut the cucumber in half lengthwise and remove the watery seeds using a teaspoon
  • Grate the cucumber into a bowl
  • Add lemon juice, yogurt, mint or dill, and salt
  • Mix everything well

This sauce is somewhere between a tzatziki and a raita: simple, fresh, and really effective 😋


🍽️ To Serve

Serve the aubergine hot with the yogurt sauce on the side.

You can also swap the sauce for:

  • spicy mayo 🌶️
  • garlic yogurt 🧄
  • or anything you like
