🛒 Ingredients
Roasted Vegetables
🎃 ½ butternut squash, chopped
🥕 1 carrot, chopped
🌿 1 tsp cumin
🌶️ 1 tsp smoked paprika
🧄 1 tsp garlic powder
🫚 ½ tsp ginger powder
🧂 Salt & pepper to taste
🫒 Drizzle of oil
Crispy Seitan & Greens
🌱 200–250g cooked seitan, cubed (link to homemade seitan recipe)
🫛 Handful of green beans
🧈 1 tsp butter (or vegan alternative)
🧂 Salt & pepper
Soup Base
🧄 3 garlic cloves, grated or finely chopped
🫚 2–3 cm fresh ginger, grated (or 1 tsp ginger powder)
🥄 2 tbsp tahini
🥢 1 tbsp miso paste
🥢 1 tbsp dark soy sauce (or 1 tbsp regular soy sauce)
🌶️ A pinch of chilli flakes (to taste)
💧 500ml boiling water
🥣 1 vegetable stock cube or pod, dissolved
🥥 400ml coconut milk
🍜 Noodles
🍜 ~300g noodles of choice
👩🍳 Method
🔥 1. Roast the vegetables
Preheat the oven to 200°C.
Toss the butternut squash and carrot with cumin, smoked paprika, garlic powder, ginger powder, salt, pepper, and a drizzle of oil.
Roast for around 20 minutes until soft and slightly caramelised.
🥬 2. Cook the green beans & seitan
In a pan or wok, melt a little butter and add the green beans. Season with salt and pepper.
When they are almost cooked, add the cubed seitan 🌱 and stir-fry for 3–4 minutes until golden and slightly crispy on the edges.
🧄 3. Build the flavour base
Add the garlic, ginger, and chilli flakes 🌶️ to the pan and cook for 1–2 minutes, until fragrant.
🥄 4. Create the creamy broth
Stir in:
- tahini
- miso paste
- soy sauce
Mix well and cook for 1–2 minutes until combined.
🥥 5. Simmer the soup
Pour in:
- boiling water with dissolved stock
- coconut milk
Stir well and let simmer for 10–15 minutes to develop flavour.
🍜 6. Add noodles
Add noodles and cook according to package instructions (about 5–8 minutes), stirring occasionally.

Serve the noodles and broth in bowls, topped with:
- roasted butternut squash 🎃

- green beans 🫛
