Roasted Vegetables

πŸŽƒ Β½ butternut squash, chopped
πŸ₯• 1 carrot, chopped
🌿 1 tsp cumin
🌢️ 1 tsp smoked paprika
πŸ§„ 1 tsp garlic powder
🫚 ½ tsp ginger powder
πŸ§‚ Salt & pepper to taste
πŸ«’ Drizzle of oil

Crispy Seitan & Greens

🌱 200–250g cooked seitan, cubed (link to homemade seitan recipe)
πŸ«› Handful of green beans
🧈 1 tsp butter (or vegan alternative)
πŸ§‚ Salt & pepper

Soup Base

πŸ§„ 3 garlic cloves, grated or finely chopped
🫚 2–3 cm fresh ginger, grated (or 1 tsp ginger powder)
πŸ₯„ 2 tbsp tahini
πŸ₯’ 1 tbsp miso paste
πŸ₯’ 1 tbsp dark soy sauce (or 1 tbsp regular soy sauce)
🌢️ A pinch of chilli flakes (to taste)
πŸ’§ 500ml boiling water
πŸ₯£ 1 vegetable stock cube or pod, dissolved
πŸ₯₯ 400ml coconut milk

🍜 Noodles

🍜 ~300g noodles of choice


πŸ‘©β€πŸ³ Method

πŸ”₯ 1. Roast the vegetables

Preheat the oven to 200Β°C.
Toss the butternut squash and carrot with cumin, smoked paprika, garlic powder, ginger powder, salt, pepper, and a drizzle of oil.

Roast for around 20 minutes until soft and slightly caramelised.


πŸ₯¬ 2. Cook the green beans & seitan

In a pan or wok, melt a little butter and add the green beans. Season with salt and pepper.

When they are almost cooked, add the cubed seitan 🌱 and stir-fry for 3–4 minutes until golden and slightly crispy on the edges.


πŸ§„ 3. Build the flavour base

Add the garlic, ginger, and chilli flakes 🌢️ to the pan and cook for 1–2 minutes, until fragrant.


πŸ₯„ 4. Create the creamy broth

Stir in:

  • tahini
  • miso paste
  • soy sauce

Mix well and cook for 1–2 minutes until combined.


πŸ₯₯ 5. Simmer the soup

Pour in:

  • boiling water with dissolved stock
  • coconut milk

Stir well and let simmer for 10–15 minutes to develop flavour.

Add noodles and cook according to package instructions (about 5–8 minutes), stirring occasionally.

Serve the noodles and broth in bowls, topped with:
