π Ingredients
Roasted Vegetables
π Β½ butternut squash, chopped
π₯ 1 carrot, chopped
πΏ 1 tsp cumin
πΆοΈ 1 tsp smoked paprika
π§ 1 tsp garlic powder
π« Β½ tsp ginger powder
π§ Salt & pepper to taste
π« Drizzle of oil
Crispy Seitan & Greens
π± 200β250g cooked seitan, cubed (link to homemade seitan recipe)
π« Handful of green beans
π§ 1 tsp butter (or vegan alternative)
π§ Salt & pepper
Soup Base
π§ 3 garlic cloves, grated or finely chopped
π« 2β3 cm fresh ginger, grated (or 1 tsp ginger powder)
π₯ 2 tbsp tahini
π₯’ 1 tbsp miso paste
π₯’ 1 tbsp dark soy sauce (or 1 tbsp regular soy sauce)
πΆοΈ A pinch of chilli flakes (to taste)
π§ 500ml boiling water
π₯£ 1 vegetable stock cube or pod, dissolved
π₯₯ 400ml coconut milk
π Noodles
π ~300g noodles of choice
π©βπ³ Method
π₯ 1. Roast the vegetables
Preheat the oven to 200Β°C.
Toss the butternut squash and carrot with cumin, smoked paprika, garlic powder, ginger powder, salt, pepper, and a drizzle of oil.
Roast for around 20 minutes until soft and slightly caramelised.
π₯¬ 2. Cook the green beans & seitan
In a pan or wok, melt a little butter and add the green beans. Season with salt and pepper.
When they are almost cooked, add the cubed seitan π± and stir-fry for 3β4 minutes until golden and slightly crispy on the edges.
π§ 3. Build the flavour base
Add the garlic, ginger, and chilli flakes πΆοΈ to the pan and cook for 1β2 minutes, until fragrant.
π₯ 4. Create the creamy broth
Stir in:
- tahini
- miso paste
- soy sauce
Mix well and cook for 1β2 minutes until combined.
π₯₯ 5. Simmer the soup
Pour in:
- boiling water with dissolved stock
- coconut milk
Stir well and let simmer for 10β15 minutes to develop flavour.
π 6. Add noodles
Add noodles and cook according to package instructions (about 5β8 minutes), stirring occasionally.
π₯ 7. Assemble & serve
Serve the noodles and broth in bowls, topped with:
- roasted butternut squash π
- roasted carrot π₯
- crispy seitan π±
- green beans π«
